300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Cocktail (produces 850ml, serving 10)

Instructions

To prepare the Citrus Syrup: Combine every ingredients inside a pot, heat until it reaches a light boil, agitating until the sugar dissolves. Next, turn off the stove and leave to cool down completely. Decant to a sterilised bottle, close it keeping it in the fridge, it can be stored for about four weeks.

To make Premix: Combine all the liquids in a large bottle, leave to sit for one hour, then filter it preferably using a fine cloth, to ensure it's perfectly clear.

When ready to serve: Pour 85ml of the premix into a stirring glass packed with ice, and stir gently for about 60 seconds to cool it down. Filter to a cold coupe glass or a similar vessel, decorate with a few cranberries and finish using a quick spritz of mandarin oil over the drink.
